German Pancakes - originally from Sunset Magazine circa 1970's
Lady Annne
Heat oven to 425.
Melt a small pat of butter in pie pans in the oven.
Meanwhile, in a blender, blend 6 eggs for one minute.
Add 1 1/2 cups milk, and 1 1/2 cups flour while blending.
Blend thoroughly for one minute.
Pour batter into pie tins, just enough to heavily cover the bottom.
Bake 25 mins, till the edges are deep brown.
Experiment with quantity, the batter should rise at edges
to make bowl shaped pancake .
Serve plain or with a variety of jellies, syrups.
Because of the long baking time (we are far too eager for these),
we adapted the recipe by using cupcake sheets instead.
Again, fill the bottom of each well heavily, but not overly.
Bake 15 minutes until the edges are deep brown.
Recipe fills four cupcake tins or six pie tins.
Slightly burning the butter before pouring batter make them tasty.
Cut ingredients in half for smaller servings.
